Where’s the Beef?

 

At Frigs Natural Meats, an all local, all organic, butchery, in a small strip mall on Main on the right, just after the Perimeter. Monique Perro introduced us to the meat bringing it home. Even the mince, as my Aussie (pronounced ozzie, thank you very much!) wife calls the ground beef, completely convincing in the most amazing and juicy hamburgers ever to come dripping out of our stainless steel skillet.

We had to go see for ourselves.  The minute I opened the door of this unprepossessing storefront, I knew this was the real deal, stepping into the smell off fresh beef blood in the air. I should warn you, it’s no place for vegetarians, even if they dearly love you, even if they have cottage cheese perogies in the freezer.  We ordered five pounds of mince packed in various sizes, two New York Steaks, two centre cut pork chops bone in, some bacon, and some lamb already frozen.  Reasonable prices, and the proof, in the eating. Highly recommended.  Certified Sustainable. Steak I think, for dinner tomorrow.
